Las Viudas - Colombia

Las Viudas is a rotating seasonal microlot that's always something sweet, vibrant, and downright lovely. Basically the Betty White of coffees. 

Right now it's a washed process Colombian lot from 4 women farmers in Tolima, Colombia. After careful handpicking and sorting of the ripest red bourbon cherries, they take their coffees to the La Roca wet mill, where rigorous processing and drying protocols are followed. Following an initial 24-hour in-cherry dry fermentation, the cherries are de-pulped and fermented again, this time for 36 hours. The coffee is then dried on raised marquesina beds. It's clear that these farmers produced this lot with care and attention; all 4 of them are 4th generation coffee growers! We're thrilled to be able to share the (literal) fruits of their labor with you.
